All our life we’ve known Oatmeal to be this boring breakfast cereal oatmeal even though it is a pretty dependable breakfast option. However, in recent times with people experimenting with different foods, this superfood power-packed with vitamins, minerals, fiber, and antioxidants, has been reinvented by chefs and amateurs from around the globe.
Oats are one of those underestimated grains whose true power is never realized until you’re using it in pretty much everything. While many think that Oats is only used for a quick breakfast, many social media influencers turned it into an internet phenomenon. Surprisingly social media has shown us all many interesting and quirky ways we can use oats.
Influencers are now showing us what can be done when Oats are baked. So if you’re still confused about how to use that box full of oats sitting idle in your pantry, then all that is about to change. Here are 3 recipes using baked oats, that will leave you reaching for seconds.
1. PB & J baked oats
Ingredients
- ½ cup Oateo steel cut oats
- 1 tsp baking powder
- 1 tsp chia seeds
- ½ mashed banana
- ½ cup milk
- 1-2 tbsp peanut butter
- 1-2 spoons raspberry/strawberry jam
- ½ tsp cinnamon (garnish)
- ½ tbs vanilla
Instructions
- Add all the ingredients to a blender and grind until combined and smooth.
- Pour the mixture into a greased tray.
- Bake at 200 degrees for 15-20 min or until the edges are brown.
- Top with raspberry/strawberry jam and peanut butter.
2. Carrot Cake-Style Baked Oats
Ingredients
- 40g Oateo rolled oats
- 1/2 a small ripe banana, mashed
- 120ml milk
- 3/4 tsp baking powder
- 1 tbsp maple syrup (or honey)
- 1/2 tsp vanilla extract
- 1 small carrot (grated)
- 1 tsp ground cinnamon
- 1/4 tsp of ginger/mixed spice/nutmeg
- 5-6 chopped walnuts and/or pistachios
- 10-15 raisins/dried fruit/dates
- Salt (a pinch)
- Yoghurt to serve
Method
- Preheat the oven to 180 degrees. Grease the tray with a little butter or coconut oil.
- Mix all the ingredients together in a bowl until combined. Do not add the yoghurt. Transfer the mixture to the dish and bake for 25 minutes or so, until golden at the edges.
- Once ready, leave it to cool for a while. Add the yoghurt and serve.
3) Savory Baked Oatmeal With Vegetables
Ingredients
- 1 teaspoon olive or avocado oil
- 1 1/2 cups (80g) finely chopped spinach
- 1 cup (80g) finely chopped broccoli
- 1/2 cup (60g) finely chopped sweet potatoes
- 2 teaspoons Italian seasoning
- 1 tablespoon tomato paste
- 2 cups (200g) rolled oats
- 1 teaspoon baking powder
- 2 cups whole fat milk
- 1 egg, whisked
Instructions
- Preheat oven to 350 degrees. Grease a square baking dish or line with parchment paper.
- Heat oil in a skillet over medium heat. Add all the vegetables and saute until softened. Add some Italian seasoning and tomato paste and cook for a few minutes. Remove from heat and set aside to cool slightly.
- In a large bowl, combine the rest of the ingredients. Add the vegetables. Allow the mixture to rest for 5-10 mins until the oats soften.
- Pour into the baking dish.
- Bake for 30 minutes, until the oats are set and firm. Make sure that it has cooled down before you cut it.
